When you touch something it sends neurons throughout your nerves. It signals your brain to understand what's going on. Your brain understands and "tells" you what your touching.

Your receptors sense pressure, heat, and other such things. They then send electrical signals to the brain through a network of nerves. Then the brain interrupts the signals to find out what you are feeling.
